Gluten Free, No Bake, Pumpkin Pie Donut Holes

Okay guys by now you’re probably thinking I’m just a tad bit too obsessed with pumpkin. Maybe I am but who isn’t this time of year? The temps may be cooling down here in Montana and fall quickly passed us by but I’ll be riding the pumpkin train all the way until Thanksgiving.

Today I am sharing this quick and easy “Pumpkin Pie Donut Hole” recipe! It takes less than 20 minutes to make and won’t give you that ‘bleh’ feeling like your typical donut would. They are gluten free (duh), dairy free, and vegan. Plus they are sweetened with pure maple syrup and a dash of coconut sugar.

Gluten Free, No Bake, Pumpkin Pie Donut Holes

*makes 16 donut holes*


1 cup all purpose gluten free flour (I use Bob’s Red Mill)

1 1/4 cup of almond flour

1/3 cup of pumpkin purée

3 tablespoons of pure maple syrup

1/2 teaspoon vanilla

1/2 teaspoon of cinnamon

1/2 teaspoon of pumpkin pie spice

1/4 teaspoon salt

For the sugar coating-

1/4 cup of coconut sugar

1/4 teaspoon of cinnamon

1/4 teaspoon of pumpkin pie spice


In a large bowl, combine your all purpose gluten free flour and almond flour. Toss to combine.

Next, add in the pumpkin, vanilla, cinnamon, pumpkin pie spice, maple syrup, and salt. Mix. (Works best if you mix with your hands).

In a separate bowl, combine coconut sugar, cinnamon, and pumpkin pie spice.

With your hands, roll about a tablespoon sized ball with the dough. Place it in the coconut sugar mixture and roll until it is completely coated.

Follow the previous step until you run out of dough. Place finished the finished donut holes on a plate.

*Donut holes will last up to 2-3 days at room temp. Do NOT place them in an air tight container or they will become soggy. To store for longer, place them uncovered in the back of the fridge (they will look soggy but will harden).
