Gluten Free Chocolate Chip Pumpkin Spice Cookies

Hey babes! You know my love for fall and how this time of the year is just so magical and full of love so I am going to continue sharing all of those things with you! The other week I shared my Gluten Free Pumpkin Bread and this week I am continuing the pumpkin theme and giving you guys my Gluten Free Chocolate Chip Pumpkin Spice Cookies!

This recipe is perfect for fall and for all of you pumpkin lovers. Bonus points because it is also just in time for the holidays and is a super yummy, yet healthy treat! Whip these up for your Thanksgiving feast and watch your friends and family devour them.

As always, this recipe is not only gluten free, but dairy and egg free, plus free from any oils and butters!

 

Gluten Free Chocolate Chip Pumpkin Spice Cookies

Ingredients

1 cup canned pumpkin* (1 CUP, NOT 1 can)

½ cup unsweetened apple sauce

1 flax egg (1 tbsp ground flax, 2 tbsp water, Mix and let sit for a few mins.)

1 tablespoon vanilla extract

2 cups all-purpose gluten free flour (I use Bob’s Red Mill)

1 cup coconut sugar

¼ cup brown sugar, lightly packed

1 teaspoon ground cinnamon

1 teaspoon pumpkin pie spice*

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1 cup gluten free, dairy free chocolate chips (I use enjoy life)

1/3 cup gluten free, dairy free chocolate chips (keep separate)

*make sure you use pumpkin puree, NOT pumpkin pie filling.

*to give it more of a ‘spice’ flavor add an additional teaspoon of pumpkin pie spice

 

 

Instructions

Preheat oven to 350 degrees F. Line a baking sheet with wax paper and spray with coconut or avocado oil. Set aside.

In a large bowl add in all of the wet ingredients (pumpkin puree, applesauce, flax egg, vanilla).

In a separate bowl add in all of the dry ingredients (gluten free flour, coconut sugar, brown sugar, cinnamon, pumpkin pie spice, baking soda, baking powder, salt, and chocolate chips).

Slowly add the dry ingredients to the wet ingredients and mix thoroughly (don’t over mix).

Place a little over a tablespoon sized ball onto the prepare baking sheet, leaving about 1 inch spaces between the cookies (They will spread while baking so you may only be able to fit 6 to a sheet).

Place in the oven for 12-15 minutes (For more of a chewy, bakery style cookie bake for 12 and for more of a firm cookie bake for 15).
