A Very Berry Summer Salad

You guys, I am so so excited for this post because it is a recipe!!! I am so excited because I haven’t posted or shared a recipe with you all in what seems like FOREVER. It is a very simple recipe but oh so good! I have been wanting to post more recipes for you guys but have been pretty busy which means less time experimenting in the kitchen. However, this month I will be sharing a total of three different recipes, yes THREE! I am so happy!

The weather here in Montana may be slowly cooling down but August is still summer in my mind, so with that said, today’s recipe I am sharing with ya’ll is my ‘Very Berry Summer Salad”! This recipe is something that I make quite often, like 3-4 times a week for lunch, so I figured why not spread the love! Again, it is SUPER simple but soo worth making!

A Very Berry Summer Salad

*makes 1 serving (easy to make in larger quantities)*


2-3 large handfuls of organic spinach

1 handful of purple cabbage

1/2 of a medium cucumber, sliced into half circles

1/4 cup of purple onion, diced

(about) 5 medium strawberries, sliced into four quarters

1/4 cup of blueberries

1/2 of an avocado

1/4 cup of pecans

1/8-1/4 cup of goat cheese




Make sure all of your fruits and veggies are thoroughly washed and dried.

In a large bowl, combine spinach, cabbage, cucumbers, purple onion, strawberries, and blueberries.

Top with avocado, pecans, and goat cheese.

Add dressing of your choice. (I use Tesserae’s organic Balsamic Vinaigrette).


*PRO TIP* Take away the goat cheese to make this recipe vegan, OR add chicken to add a little extra protein!
